Chicken Liver Pate aka Chopped Liver
A powerhouse of nutrition rich in iron and B vitamins.
500g organic chicken livers
1 tbsp chicken fat, coconut or olive oil
1 large onion,peeled and chopped
2 cloves garlic,peeled and crushed
3 to 4 hardboiled eggs
fresh herbs such as coriander, thyme or parsley
salt and pepper
Heat the fat or oil and fry the onions until nice and carmelised add the garlic and cook for another 2 minutes. Add the livers and cook until brown. Turn them over and brown on the other side. Put the onion and liver mix in the blender with all the other ingredients and blend to a fine paste.
Store in the fridge for up to a week and eat on fresh lettuce, crackers or toast. It can also be frozen.
