This recipe is a really simple way to add miso to you and your family’s diet. Miso is rich in B vitamins and also has a radioprotective effect which is so important in these times of high technology. This recipe is from Jonno Proudfoots book The Real Meal Revolution.
Use only organic ingredients:

125 g miso, use organic I recommend white miso as it has a lighter flavour
125 ml apple cider vinegar
Juice of 1 lemon or lime
Small piece of fresh ginger

Blend and use as a salad dressings, on meat, fish or vegetarian dishes. Keeps in the fridge for ages as the apple cider vinegar acts as a preservative.
For medicinal purposes have a minimum of 1 tbsp per day per person.
