Reminds me of toast and marmalade! A guilt free delicious gluten free cake rich in protein, iron and chromium.

Ingredients
2 large oranges washed
3 eggs
250g almonds
125g Stevia & Monkfruit sweetener or 1/2 cup maple syrup
2 tsp baking powder
1 tsp cinnamon
130 g butter or coconut oil

Cook the oranges in plenty of boiling water for one hour. Coarsely chop including the skin and remove any pips. Preheat the oven to 180 degrees. Blend oranges with all the remaining ingredients. Pour the batter into a greaseproof lined cake tin for 35 minutes. Allow to cool before slicing.
