1.25 cup macadamia nuts soaked in warm water to cover or overnight, strained but keep the water
2 tbsp lemon or lime juice
1-2 tbsp nutritional yeast
1/2 tsp salt
i garlic clove
handful of fresh parsley or coriander

To make the cheese blend all the ingredients with half the water from soaking. Add more water if needed to make a smooth paste.Taste and adjust flavouring. Transfer the ‘cheese’ to baking paper or a cheesecloth and refrigerate for 15 mins to 36 hours.Secure the baking paper or twist the top of the cheesecloth to form a loose ball. Serve with fresh vegetables or salad.
