With thanks to Avril Moss try this tasty and healthy bread rich in calcium,magnesium,zinc and B vitamins. It’s delicious straight from the oven and toasted the next day.

0.5 cup psyllium husks
0.5 cup whole flaxseeds
2 cups almonds
0.5 cup coconut flour or desiccated coconut

First blend these ingredients to a flour. Add the next ingredients

0.25 cup flaxseeds
0.25 cup sunflower seeds
0.25 cup whole pepitas
0.25 cup chia seeds
2 tsp baking powder
1 tsp salt

Blend so seeds remain chopped but visible. Add 800 ml water (or kefir) and spoon into a loaf tin lined with baking paper. Sprinkle a few whole seeds on top. Bake 180 degrees C for 1 hr.
