Packed full with nutrients and delicious try this different salad; ideal for summer.

Adapted from an Ascension Kitchen recipe.

INGREDIENTS

  • 1 cup grated beetroot
  • 1 cup grated carrot
  • 1 cup finely chopped red or white cabbage
  • 1 bunch coriander
  • 3 shallot finely chopped

DRESSING

  • 3/4 cup goji berries soaked in filtered water to cover for at least one hour
  • 4 tbsp apple cider vinegar
  • 1 tbsp unhulled tahini
  • 1 cm ginger peeled and sliced
  • 1 tbsp light miso paste
  • black pepper

Prepare vegetables.

Blend all the dressing ingredients ( including the water) to a smooth paste.

You can keep the dresinng and chopped vegetables in the fridge until you are ready to eat it.

Mix well and serve.
