This is a delicious and refreshing summer soup inspired by a Yotem Ottolenghi recipe. Its rich in Magnesium, Calcium, Sulphur and vitamins B,C & K. Its also super easy to make. For optimal nutrition and taste use organic ingredients.

INGREDIENTS

  • 2 celery stalks and leaves
  • 1 green capsicum
  • 5 lebanese cucumbers
  • 6 cups of baby spinach
  • 1 green chilli
  • 4 garlic cloves
  • 0.5 cup almonds or macadamia nuts
  • 0.5 cup fresh mint or basil
  • 4 tbsp apple cider vinegar
  • 1 cup olive oil
  • 2 cups of filtered water
  • 2 tsp himalayan salt
  • 0.5 tsp black pepper

Blend everything well and refrigerate for at least 3 hours before serving.
