Recipes of the month



This is a delicious and refreshing summer soup inspired by a Yotem Ottolenghi recipe. Its rich in Magnesium, Calcium, Sulphur and vitamins B,C & K. Its also super easy to make. For optimal nutrition use organic ingredients.




2 celery stalks and leaves

1 green capsicum

5 lebanese cucumbers

6 cups of baby spinach

1 green chilli

4 garlic cloves

1 cup lightly roasted almonds

0.5 cup fresh mint or basil

4 tbsp apple cider vinegar

1 cup olive oil

2 cups of water


Blend everything well and refrigerate for at least 3 hours before serving.
